Turducken Time!

Canadian Thanksgiving is just around the corner, and i've decided to do Turducken this year, as my folks have never had it before. Turducken is a Turkey stuffed with a duck, stuffed with a chicken. All the birds are de-boned so every slice of turducken had turkey, duck and chicken.

I Just received confirmation that the Fort York BBQ Competition will have to be moved to an alternate location.. This is very sad for our team as many of our team member are in downtown Toronto and without cars... Looks like we'll be dropping out.

Slow Low Prime Rib Roast

I dont think i've made a rib roast as delicious at this one ever before, I seared it first for 10 minutes to create a nice crust, and cooked it on my Char Griller with low indirect heat with lots of apple and hickory. Took a few hours, but was well worth the wait. Took the meat off at 120f and wrapped tightly in foil and rested for a solid hour before carving it up.

Bruschetta on the Smoker.

Some friends popped over for dinner on Friday night, and brought along a whole bunch of Fresh basil from their garden.. we put it to good use making Bruschetta on the smoker. Recipe after the jump
