The too much meat for 4 solid days recovery salad..

Don't get me wrong... I love my bbq, but after a few days of heavy drinking and nothing but meat, I get a hankering for a man size salad. Don't worry though this salad does get the grill treatment with chicken and corn. Recipe after the jump.

1 Cucumber Peeled and bit sized chopped
2 cups grape tomatoes cut in half
1/2 LB Feta cheese
3 Grilled cobs of corn
1 bunch of fresh dill
2 Grilled Boneless Skinless Chicken Breasts
Dash of Worcestershire
Dash of Chipotle Tabasco
2 Lemon Juiced
2 Lime Juiced
Salt and Pepper


Chop the cucumber and tomatoes, and finely chop the fresh dill. Crumble the cheese in there too. Put the whole mess someplace cold.. like the fridge in a bowl.
place the juice and a bit of zest from the citrus in a 4 cup bowl and set aside.
Grill the corn over 450f-500f high direct heat, turning the corn and brushing the corn with oil to help make it nice and charred.
Grill the chicken over 450f-500f high direct heat, brushing with Worcestershire & Chipotle Tabasco.
De-cob the corn and slice the chicken into bit sized bits and place in lemon and lime juice to soak up flavor. place in refrigerator for at least on hour to cool. once everything is nice and cool, mix the whole mess together Salt and pepper to taste and serve! If you feel like "bringing it up a notch" top with a dash of Tabasco or your favorite hot sauce.
