Gas BBQ Shuffle Wings with Spicy Sauté Chick Peas, and Mango Lemon Rapini

| | Comments (0)

I seem to be on a chick pea kick these days.. real simple recipe after the jump. The lemon and mango balances out the bitterness of the rapini. If you have a hoppy India pale ale or wheat beer it makes a nice pairing. Notice the nice dinnerware/flatware ? GO DIXIE!

Wings
Toss the wings with the garlic pepper and let em sit for a 10 minutes or overnight.
My gas grill was feeling sad and neglected so i decided to use it..
When cooking chicken on the grill you need to do a fair bit of shuffling. first i start the wings on the top / upper rack far away from the flame but still over direct heat and cook them on med-low (300-350f) till they start to brown, about 20-30 minutes, turning them once.
Shuffle them to indirect heat and cook for another 10-20 minutes.
Always make sure your chicken reaches an internal temperature of 170f, the juices will run clear.
Lastly shuffle them to low direct heat. brush the wings with bbq sauce so you can get a nice carmel coating on them about 5 minutes. I leave the lid open for this last step, you don't want to burn those wings!

Chick peas:
Combine all ingredients, throw into cast iron pan and throw on the bbq while cooking the wings, give them a stir every once in a while to give them i a nice coating and keep from sticking to the bottom of the pan.

Rapini:
on the stovetop or side burner.
to a hot pan, add the butter and cook till the butter starts to brown, add the rest of the ingredients and sauté for 15 minutes till the rapini wilts.

HAPPY EATING!
