Double Chocolate Cherry Stout Ice Cream.
I bought my first ice cream machine this weekend.. decided to go "straight to pro" and not even bother trying to make basic ice cream my first time, and it worked! I used a variation of a custard recipe i've made before. my mind is still blown with that ice cream i invented, I don't think i'll ever buy store bought ice cream ever again. oh.. and yes stout is beer.. so this is beer ice cream.
750 ml double chocolate cherry stout, reduced on the stove to 500ml
500 ml heavy cream
1/4 cup grade b maple syrup
3 tablespoons sugar
1 vanilla bean
50 grams lindt 70% chocolate , shaved.
9 egg yolks
1/2 cup fresh Ontario cherries, cored and sliced.
Combine all ingredients except the eggs and cherries on the stove and bring to a boil, whisking constantly. temper egg yolks and continue to whisk,. set to cook in refrigerator for at least 4 hours. Use your ice cream machine according to manufacturers instructions, stir in sliced cherries with a spatula and leave to cure in the refrigerator overnight, or at least 4 hours.
Serve alongside the stout in a port glass and a square of dark chocolate in the ice cream .
I suppose any stout beer would work, so if you cant find a chocolate cherry stout, Guinness would work.
