Cornbread!

I really love cornbread with just about all BBQ food Soups and Chili. Recipe for Cornbread After the jump.

1 1/3 cups unbleached flour
2/3 cup cornmeal
1/4 cup sugar
2 tbsp. baking powder
1 1/3 cups full fat (6%) balkan style yogurt
1 egg beaten
1 tbsp. olive oil
1/2 cup butter - melted
pinch kosher salt

Put the dry ingredients in a large bowl and make a well in the center. put the wet ingredients in a small bowl and whisk to combine. Add this mixture to the dry ingredients, and stir until just combined, you want it a bit lumpy, stay away from your kitchen power tools, this recipe needs to mixed with a wooden spoon or spatula. let it sit for a few minutes to let liquids even out with the dry goods. Pour into a lightly greased 8" x 8" pan or well seasoned & greased 8" cast iron pan . Bake at 350ºF for 25-30 minutes

To add a nice "Kick" mix in some aromatics before baking:
1/2 cup parsley - chopped
or 3 chopped jalepeno pepppers
or 3 cloves of chopped garlic
