Tex-Mex Crusted Prime Rib

I just realized that I had not put any beef recipes up! Beef is there reason I started Q'in in the first place. Recipe after the jump.

Make sure you buy your prime rib with the bone in! bone in cooking has a whole lot more flavor than without. my rule of for serving prime rib with bone in, is about 1 to 1 1/2 Lb per serving..

Tex mex rub:
equal parts:
brown sugar
chili powder
sweet paprika
1/4 part kosher salt

As you can see from the photo, don't be shy with the tex mex rub, you wanna get it close to 1/4 inch thick on all sides that will hold it.

Place on HOT direct heat for about 3 minutes per side to "seal the juices" and get a nice bit of caramelization on the meat.
Cook on medium indirect heat (275f-325f) for until internal temperature reaches 110f-130f. Most average roasts will take about 2-3 hours.
wrap with foil and let rest for at least 10 minutes.
